What comes to mind when you think of Thanksgiving?
The food, naturally, whether or not that shows a slight problem in priorities.
From what I have seen, most families serve the typical Thanksgiving favorites: turkey and dressing, sweet potato casserole (or if you’re in my family, both sweet potato casserole AND candied yams), green bean casserole, rolls – you name it.
But what about potato salad? Yeah, you read that right. It was a dish I wasn’t used to eating during this holiday, but my fiancee’s mom served it at a Thanksgiving dinner several years ago. I was hooked immediately.
So, I decided to make some potato salad today, in preparation for the quickly-approaching holiday.
– 2 potatoes, baked, chilled & cubed
– Sweet pickles
– Mayonnaise
– 1 hard-boiled egg
– Mustard (optional)
– Salt and pepper to taste
The ingredient list tells it all. Simply follow the list, and add as much (or as little) of the pickles, mayonnaise, mustard and seasoning as you like.
